As with most people, when the trainers at Mitise run a little low on food stocks, they like to concoct random creations that will make do until shopping day.

Wednesday night was one of those times.

This time it was Josh’s fridge that was running low, and this is what was available:

- One chicken breast
- Two rashes of bacon
- One green capsicum
- One medium sized carrot
- One small red onion
- One large celery stalk
- Small tin of minced garlic
- Some organic butter
- Half a packet of shredded parmesan cheese and
- One small tin of coconut cream

So in true ‘Josh’ fashion, he threw it all together and actually came out with a delicious-tasting Coconut and Parmesan Chicken Breast!

In order to make this quick and easy healthy meal at home, see how he did it below…

1. Cook off the organic butter in a fry pan on high heat, until it covers the bottom of the pan.

2. Place the chicken breast in the pan, searing until the edges start to go white, at which time turn down the heat to a low simmer and flip breast over. Cover the pan with another pan or a lid to keep juices in.

3. While chicken is simmering, dice up all vegetables and throw together in a strainer – washing thoroughly under cold running water.

4. Heat up a second frying/sauce pan, and cook off a portion of organic butter and the minced garlic, mixing together to coat the pan. Throw in vegetable mix and toss through, leaving to sit on a low heat.

5. Once cooked (no pink inside), take chicken out of the first pan and let it sit, placing the two rashers of bacon into the pan. Cook the bacon in the left over chicken and butter mixture, adding a bit of flavour to an otherwise boring bacon rasher.

6. Once vegetables and bacon are cooked to your liking, dish up vegetables on a plate with the chicken on top. Place the bacon on top of the chicken, allowing any flavours to soak through to the veggies.

7. Last but not least, we need to do the sauce. In the same pan as the chicken and bacon were cooked in, pour in a half tin (roughly 250ml) of the coconut cream and turn the heat up.

8. Reduce cream until it starts to bubble around the edges, then add a small pinch of the parmesan cheese and mix together. By now you should have a thick sauce that holds itself well when poured (if not, add more cheese until you reach desired consistency; but be conscious of the decreased healthiness of the meal!).

9. Pour sauce over bacon and chicken, and enjoy with a glass of sparkling mineral water!
